Shopping for GFCF Snacks


Yesterday, I went to Trader Joe's to buy some snacks for my son. It was not pretty bad coz I went to the branch near our place but the parking was really compact. I picked up some bananas and went searching for some good gfcf snacks. I found gf tj kettle popcorn in pink bag which my son really like so I picked 3 bags. This costs $2.49 each not bad considering all ingredients are natural/no preservatives. I grabbed gf vanilla meringue and some pretzels for my work snack and 2 bags of brown rice penne pasta for my son's spaghetti. I did not find any oreo looking & tasting like cookies like he always asks for in school. So, I went back home and tried to search internet for this. I found kinnikinnick website & voilahh! I have never thought I would actually find this website. Now the only thing I need to do is place my order. I still have to do alot of research on gfcf foods/snack and experiments the likes and dislikes. He just got on the diet beginning the 1st of February. But I'm really happy that I get alot of resources and support around me.

GFCF Chicken Adobo Recipe

Ingredients:

1 whole chicken (cut into eighths)
1 whole garlic (chopped)
1 onion (sliced)
1/2 tsp olive oil or vegetable/corn oil
1 tsp ground black pepper-Mc Cormick
4 whole black pepper cloves (optional)
3 dried bay leaves
1 cup soy sauce-La Choy Soy Sauce
1 whole lemon (cut into 4)
2 potatoes cut into cubes (optional)


Remember to wash your chicken very well. We recommend using the lemon (in ingredients) to scrub all over the chicken parts and rub some salt into it as well.
Heat oil and add all of the garlic & onion and cook until garlic is lightly browned. Add chicken and saute until the chicken is beginning to tenderize.
Add ground black pepper, whole black pepper cloves, soy sauce, and a squeeze of lemon juice, let simmer for 25-35 mins or until chicken is done. Add potatoes 10 minutes before chicken is done.
Make sure to add more lemon juice or soy sauce until it suits your taste (should be a bit tangy).

Serve over rice.

Or another easy way to cook without using oil is to put all the ingredients together (except for potatoes which will be added later 10 minutes before the chicken is cooked). Let it simmer for 30 minutes or until chicken is cooked.
