The End of this Road for GFCF

It has been over a month since I put an end on GFCF diet. It hurts to
let go of it because I have worked really hard to make this diet a
routine for our family. From searching the net for the right books to
read to shopping around town for health food stores and learning the
basics of this diet. Bottomline is I didn't see a significant effect
on my son. Though it helped alot on him cutting off on sugarry foods.
We learned alot from this diet and now even if we are off the hook, I
still have the values instilled in my mind. I will always remember to
choose organics for all the items I buy though it's a bit expensive.
Thank you for all the support we got from TACA. We're always a
follower. Though he's not on the diet anymore, we are looking into
another kind of biomedical treatment which I'm not ready to start on
with him. Maybe in a month, I'll have something new to post or share.

delightful to see this on the shelves of WF. Finally after awhile it's
back with not only 1 but 3 flavors. Yes, it's the Glee gum (gfcf) all

Cheatday Sunday

I can't imagine how long my son hasn't been eating bagel and cream cheese. T'was today when I finally messed up with his diet and allowed him to eat what's forbidden, gluten & milk! I don't know what the effect will be but I'm ready to deal with it since I'm the guilty one. He has been very uneasy this past couple of days and I dont't know why. (must be the full moon) Anyway, he's been asking over & over that he wanted to go to Walmart to buy another set of Marvel action figures not to mention we just bought a new Hob Goblin last Friday in Hollywood. Don't know about that but he was really persistent to go there. Finally, after we went out to eat breakfast and buy some pair of shoes for mom, we went straight to the final destination, WAlmart. I'd have to say he was behaving very good right before we went and patiently waiting while we shop in the store. He was able to get what he wanted. After that, he was super behave at home. He was saying appropriate words without being prompted. He even said hi to his dad when he saw him came in. He wasn't doing solitary play when he was at McDonald's instead he followed and playe with his sister.

Candida Albicans

What Foods Should Be Avoided?

Candida Albicans are a form of yeast that is normally found in the lower bowel, the vagina and the skin. (see below) In healthy individuals the presence of candida albicans is considered a normal part of the intestinal flora - the community of bacterial organisms that live in the lower digestive tract.

Candida Albicans comprise most cases of yeast infection in the United States.

Pathogenicity among yeasts is extremely variable-- the most virulent is Candida albicans.

Many yeasts are normal flora inhabitants of humans. Many Blastomycetes (yeasts and yeastlike fungi) constitute a resident population regularly part of the skin, surfaces, buccal mucosa, intestinal tract and vagina mucosa. When the normal flora of these areas is disrupted, often Candida albicans or other yeasts can become a problem as they take advantage of reduced competition

Candida Albicans is a yeast overgrowth. Yeast is found in all manufactured citric acid and in most fruits; in vinegar, which is made of fermented wines, and in ciders from such fruits as grapes, pears, apples, and some herbs. Vinegar is used as a preservative for mustard, catsup, olives, mayonaise, many dressings, pickles, horseradish, spices, soy sauce, Worcestershire sauce and dried fruits. Canned or frozen fruit juices contain yeast, only hand-squeezed and fresh juices are yeast-free. Fruit and fruit products that are canned commercially have a higher yeast content than those that are canned at home. Melons (especially cantalopes) and oranges are loaded with mold and yeast on the outside skins. Fruit should be eeled, not cut into, because in the motion of cutting through the skin with a knife, the meat of the fruit is contaminated. Mushrooms and cheeses of all kinds contain or actually are specific types of molds or yeasts; for instance, Roquefort cheese contains the mold Penicillium Roqueforti. Other yeast-containing milk products are buttermilk, sour cream, cream cheese, ricotta cheese, ice creams, powdered milks and milk itself.

12 Hour Cure For Yeast Infection

In order to eliminate Candida Albicans, one must eliminate all yeast containg foods.

Tea, pepper, coffee, coffee substitutes, many spices and tobacco acquire molds or yeast in their drying processes. Other foods that encourage Candida Albicans are baked goods, breads, biscuits and pancake mixes, soda crackers and any other foods requiring the use of baker's yeast. Ice cream, candy, malted milk drinks and soda fountain drinks contain sugar yeast.

Some Simple Suggestions to elminate Candida Albicans

Avoid any food you're allergic to for a month or two, then, because food allergy is 'like a fire that dies down', cautiously try eating a food troublemaker again. If it doesn't trigger your symptoms, eat it occasionally, but no more often than every 4 to 7 days.

Include more vegetables in your diet - vegetables of all kinds, even some you don't usually eat.

Bake, broil or steam your vegetables. You can use herbs, fresh or dried, to season them (if you aren't unusually sensitive to molds).

Lean meats and fish are OK. Yet, you don't need to eat them every day and certainly not every meal.

Eggs are OK if you aren't allergic to them. However, eating them once or twice a week is enough.

Grain products, including oatmeal, oat bran, whole wheat, shredded wheat, brown rice, rice cakes, barley and millet are nutritious foods. They contain fiber and lots of trace minerals. Include them in your diet if you aren't allergic to them.

Become familiar with and use the grain alternatives, amaranth, quinoa and buckwheat. You can find these products in almost any health food store.

Avoid sugar and foods that contain simple carbohydrates, including corn syrup, white flour, white rice and honey.

How about dairy products? Many people, including those with CRC (candida related complex) are bothered by intolerances and allergies to milk - especially whole milk. (It also contains lots of undesirable saturated fat) So use dairy products with caution. However, sugar-free fruit-free yogurt is generally well tolerated, even by some people who are sensitive to other milk products. Home-prepared yogurt (using yogurt starter) is especially good because it contains more friendly yeast-fighting lactobacilli.

How about fruits? Along with other specialists, I've found that fruits often trigger symptoms in patients with CRC. So I usually tell my patients to avoid fruits for the first three weeks, until they improve. Then begin eating them on a trial basis - cautiously.

How about yeast-containing foods? Many people with CRC develop symptoms when they eat raised breads, moldy cheeses, drink beer or canned fruit juices (such juices are loaded with yeast). Moreover, some highly sensitive people may react to small amounts of yeast in salad dressings or left-overs. Still others develop symptoms when they drink coffee or tea.

In discussing fermented and aged products, juices and other beverages, yeast authority Sidney M. Baker commented, "Everyone is different. Individual tolerances for coffee, tea, cheeses, juices, and alcohol have to be determined on a trial and error basis by each person.

He also stated that freshly squeezed juices stored for a day or two in the refrigerator don't usually cause problems and that some people can consume "high 100 proof alcohol beverages with fewer problems than if they consumed beers or wines."

What can you drink?

I especially recommend bottled or filtered water. Here's why: it contains fewer chemical contaminants. For a hot beverage, add a squeeze of lemon or orange juice. Herb teas are also well tolerated - if you aren't highly sensitive to yeast and molds.

How about coffee and regular tea? Some people with CRC tolerate them, while others do not. If you're sensitive to yeast, you'll have to experiment. And even if yeasty foods and beverages don't bother you, eating or drinking the same substances every day often causes problems.

How about artificial sweeteners? Many people with CRC tolerate them in limited amounts. You can try them and see if they agree.

As long as your immune system is healthy and strongly functioning, Candida albicans growth is regulated and kept under control.

My Very Own Mac & Cheese

I don't know anyone who uses these ingredients to make gfcg mac & cheese. I discovered this by accident while I was trying on different things to come up with a good tasting MC. Luckily this combination worked out well for my son. He liked it alot like the regular ones. Nothing beats this! I'm just so happy I discovered an addition to my gfcf pantry.

GFCF Yeast Free Sliced Bread


Here's what I can say about this bread, it's nothing different to a regular bread when it comes to taste. I have tried different combinations of flour until I finally hit the right formula! It's not sticky or dry and it's just the perfect pair. I used Arrowhead Mills GF Baking Mix and Tapioca flour. Let me just tell you that tapioca really makes the bread taste good and smells good! I used the recipe from Special Diet for Special Kids Two. The best part of it all is it's yeast free!

Another Round of AIT (Auditory Integration Training)

My kids just recently graduated from AIT ( Auditory Integration Training) training last MAY 2009. It was the second time for my son and first time for my daughter. Though my daughter is a typical child, I decided to put her on this training to improve her listening skills and to maybe atleast make her more patient.

I did notice such improvement on her after the training. Though she still becomes impatient sometimes, it has improved her well-being. Her sitter noticed a change in her as well. While on the other hand my son continues to progress, I can't wait for six months to come to see what difference does it make on him.

Back to MB12 Shots

I just resumed giving a dose of MB12 shot with my son today after a month of not being on it. It's because I couldn't figure out where the changes are coming from. And to my surprise, I realized GFCF is finally working. Of course with AIT on the side and some supplements he's having. For sure, with AIT, his sensitivity to sounds went away especially with firetruck/ambulance siren and the noise from crowded places. It might have also helped him in his speech but my instinct tells me it's gotta to be the diet he's in. But I realized it's the combination of both. Everyone who knows him noticed his speech has improved as well as his eye contact. Yey!

Trade Joe's Chicken Breakfast Sausage (uncooked)

I happened to pick this out at the shelf in search of what I previously bought. Good buy and juicy good tasting sausage. My son loves them. Easy to prepare. I love it because all the ingredients are organically grown, gfcf and no artificial flavor/ingredients.

GFCF but Nevertheless, Good!

Since I tried different chips from health food store including Lundberg Rice Chips, chips have never tasted so healthy and so good!! From time to time, I get to eat Doritos on my break but my taste bud can tell that this isn't satisfying for me. Well! I have gone from those regular chips we buy at the grocery store to this lines of healthy chips and I must tell you that not all healthy chips aren't good! You just have to keep trying different brands. For our family, some of our favorites are Lundberg Rice Chips, Pita Chips (not GFCF) and Food Should Taste Good brand.

What Happens When Diet is Infracted?

This is according to my experience..

When my son eats something prohibited from the diet, instead of getting flushed out like other foods, it leaks out into the bloodstream. Within 24-48 hours, it reaches the brain. Then the problems occur. He gets hyperactive and keeps making noises, he gets jumpy, even harder to focus, and tends to have less patient and gets frustrated easily. He seems to recall things that upsets him a minute ago which starts a whole new tantrum. And again and again..it's been researched to cause inflammation in the brain preventing the neurotransmitters to interact, perform, semd/receive messages and grow.


Why Go GFCF?

The theory is that many if not all autistic children have a damaged intestine/gut. The damage may be there from birth but more likely comes from some immunological injury like a bad reaction to an immunization. (keep in mind this is mostly theory). Autistic children seem to have weaker immune systems, and a lot seem to have digestive problems.

This "leaky gut" allows some food proteins to pass through into the bloodstream only partially digested, particularly the gluten from wheat/oats/rye/barley, and the casein from milk and other dairy products. These partially digested proteins form peptides which have an opiate-like affect (opioids is another term for them). They can bind to the receptors and cause harmful effects in the brain just like a regular opiate. Opiates can either cause or magnify autistic symptoms. The opiates are a type of narcotic. There are receptors in the brain that they bind with to reduce pain and induce pleasure, but they also have harmful side effects. An example of an opiate is morphine or heroin. Until it can be figured out how to heal the "leaky guts", many parents are putting their children on the gluten free/casein free diets .

If you look at the available medical literature, there are at least three highly reputable sources for the benefits of removing certain dietary items (gluten and casein) from the diet of children with autism. In the studies of Cade*, Reichelt* and Shattock*, approximately 80% of autistics are significantly improved (not synonymous with cured) by the STRICT removal of gluten and casein. A 100% gluten and casein free diet. Sorry, but 99% free doesn't count. This means no: milk products, wheat, barley, oats, spelt or rye flours. (It is tough to do because most autistic children are fully addicted to the stuff - but there is enough emperic data and clinical observation to justify the one year trial). It has been found to take up to one year to remove all the caseomorphine and glaidomorphine from the body. This is because of the blood reproduction and ability to breakdown and rid body of it.

Observe behavior during the wash out. Be aware that many family members and well intentioned friends or teachers have the idea that "just a little won't hurt". This is wrong and there is good data to support why this is true, but if you really want to know if this is what is making your child autistic, then you must really police this.

Speech Therapy on the Run

Finally, after months long of waiting for summer to touch down in L.A., my son will be attending summer Speech Therapy twice a week for 2 hours until school resume on September. It was just timing that I called the therapy agency that told me I have until August 31st to use the services and the date I picked which started on June 22nd will end exactly on August 28th. I have to make arrangements who is going take him there. Thank goodness my husband volunteered himself!!! (like he had a choice!).

So far, first session ran great. My husband reported therapist was good and must have been longed experienced one in this kind of field! Great! She was also able to accommodate our schedule as my son has other therapy session to attend during the day not to mention summer camp will start in July.

Diet Infraction

OMG. My son has not been functioning well since Monday. A lot of giddiness and silliness, sensory seeking and jiver javerring!! This is what infraction does. That Sunday, he took a piece of his sister's fish cracker and nibbled a piece of Popcornopolis cheese flavored popcorn. I guess that really has an effect on him. Since I took him off of B12 shot, I never really noticed anything different until his diet was infracted.

Since he started the diet in February he started to talk in full sentence after 2 months. Not to mention he also had Auditory Integration Training in January which was still effective. He was also banging his head more often lately not because he was upset but has something to do with sensory. I have not been giving him Calcium for the last 3 days because I ran out. I asked his doctor who was 70 miles away about what kind of Calcium will do better and he recommended the Calcium Citrate.

Today, I called 4 different vitamin store to check if they have CArlson Kid's Chewable Calcium. I got lucky with Vitamin Barn. I got off my sit and took off to buy this. It costs $8.01 including tax. Not bad compare to online price of almost 11 bucks. Thanks to Vitamin Barn!

The Dangers of Nitrite in Lunch Meat and Hotdog


Sodium nitrite (or sodium nitrate) is widely used as a preservative, antimicrobial agent, color fixative and flavoring in cured meats and other products.

Children born to moms who ate a lot of nitrite-containing cured meats while they were pregnant may have an increased risk of brain tumors.

If you eat hot dogs, bacon, ham, luncheon meats, corned beef, smoked fish or any other type of processed meat; you are almost assuredly consuming nitrites.

If you love lunchmeat, pepperoni, bacon, sausage and other cured meats, look for nitrite-free varieties in your grocery store. If they're not there, request them!

Though this preservative has been studied for more than 50 years, there is still ongoing debate as to whether or not it's harmful. Some experts say that the health claims against the preservative have "not been substantiated" while others recommend avoiding them in your diet entirely.

Why You May Want to Avoid Nitrites

Numerous studies have found that nitrites contribute to a variety of negative health effects, which we've compiled here.

  • Cancer: When you eat nitrites, they can be converted into nitrosamines, which are potent cancer-causing chemicals, in your body. Specific cancers seem to be most affected, including:
    • Colorectal Cancer: People who ate the most processed meat were 50 percent more likely to develop lower colon cancer, according to a study in the Journal of the American Medical Association.
    • Stomach Cancer: An investigation into 15 studies on processed meat found that the risk of stomach cancer increased from 15 percent to 38 percent if the processed meats ratio consumed by an individual rose by 30 grams.
    • Pancreatic Cancer: People who ate the most processed meats had a 68 percent higher risk of pancreatic cancer compared with those who ate the least, a study in the Journal of the National Cancer Institute found.
  • Chronic Obstructive Pulmonary Disease (COPD): People who ate more than 14 servings of cured meats per month scored lower on tests of lung function and had an increased risk of COPD compared with people who did not eat cured meats. For each additional serving of cured meat per month, the study found a 2 percent increased risk for COPD.
  • DNA Mutations: Hot dogs that contain nitrites have been found to contain DNA-mutating compounds. If enough DNA mutations occur in the gut, it could increase your risk of colon cancer.
  • Brain Tumors in Children: Children born to women who ate a lot of cured meats during pregnancy had a two to three times greater risk of developing a brain tumor than those born to mothers who did not eat cured meats. Children whose mothers at low levels of cured meats during pregnancy had a moderate increase in brain tumor risk, the study, published in Public Health Nutrition, found.

Does This Mean I Should Never Eat Bologna, Hot Dogs, Pepperoni ... ?

Yes ... and no. If you are concerned about nitrites and want to avoid them in your diet, you must cut out most all commercial hot dogs, luncheon meats, sausages, bacon, and processed meats (even that in canned soup).

However, supermarkets are increasingly offering nitrate/nitrite-free varieties of everyone's favorites. While some have pointed out that nitrite-free meats are often still "cured" using salt, sugar or another natural curing agent, which may be misleading to consumers, they do not, at least, contain nitrites.
To make even healthier meat choices, look for nitrite-free products that are also grass-fed and free of artificial flavors, artificial colors and byproducts.

It's also worth noting that processed meats are not the only sources of nitrites. Green leafy vegetables and root vegetables contain naturally occurring nitrites, though it's thought that compounds in the vegetables inhibit the formation of the harmful nitrosamines in your body.

Nitrites also exist in drinking water due to fertilizers, manure, animal feedlots and other environmental pollution sources.

Exhausting Day

I find this day very exhausting!!! After 7 hours of being out hopping from 1 city to another, my husband and I got home around 6:45 pm. Of course, we missed the kids! They spent their time home watching tv and doing some arts and crafts while my sister look after them. My daughter wanted to go to the beach for 3 weeks now but the weather wasn't permitting. She brought that topic again and of course, I've promised her next weekend if the sun comes out early then we'll jump out of bed and head to the beach fully geared!

My day didn't go as planned. I was supposed to stop by the new market in town down in Woodland Hills to see what gluten free products they have but my migraine attacked. Henry's Farmer's Market that is. Now I am still thinking of what to prepare for snack and lunch for my son tomorrow. Adding to my migraine, my son nibbled a piece of Popcornopolis that I immediately took away from him. He then went to another room and found my daughter's fish cracker and nibbled another piece. This has gotten me even more disappointed!!! Poor him! I felt like depriving him of everything in life!! But on the other side, I just poured my thinking of how he gets better without gluten. Living without gluten isn't easy!

Yeast Free Pizza 3


I baked this 3 nights ago when I ran out of food to put in his lunch bag. So far, I've tried Kinikinick brand of pizza, Glutino and Brown Rice pizza but none of them was liked for a long time. Usually my son would only try them once or twice but after that, he didn't them anymore. They all came back home from school. The recipe I made came from Special Diet for Special Kids 1. The ingredients are organic baby rice cereal (Beechnut brand or Earth's Best), baking powder, egg substitute (because my son has allergies to egg), olive oil, rice vinegar, gfcf rice flour, garlic salt and water. Mix all ingredients together and make a dough and put in the oven for 19 minutes, then add favorite topping and bake for another 5 minutes depending on the toppings cooking time.

The pizza looked good when it was popped out of the oven. It's thick and sure looks like a real pizza! The taste is great. No yuckies.

Baking Cookies

I bought gluten free Bob's Mill Chocolate Chip Cookie Mix at Whole Foods Market the other month. When my son's Tx came in a week ago, she picked brownies to bake with him during the session. He loves doing some of the mixing and stirring of ingredients while he says "chef!" I guess he wants to be a chef that's why. So last night, I asked if he wanted to bake cookies for his snack at school tomorrow. And he actually grabbed the little stepping stool and joined me in the kitchen.

This recipe is so easy to make with the help of Bob's Mill Mix. There are alot of varieties to choose from on their gluten free mixes. The cookie itself tastes good although I have to use Ener-G egg substitute because my son is allergic to eggs. Instead of margarine, you can also use any of your favorite oil. I used olive oil because that's all I have in the kitchen that I know is safe. By the way, I do have Canoleo Soft Margarine in the fridge but I didn't use because of milk derivatives. This baking session was successful. He liked the cookies!! I only gave him two small pieces because they're too sweet. But other than that, it is awesome good!

Sun Peeking Through Our Window

It's been 6 months since we began this biomedical journey for our son. First it was, AIT, then GFCF diet, then DAN! doctor, then yeast free diet for short a period, the B12 shots and supplements. It was amazing how he had made this huge progress everyday. It's surprising how his speech has improved and with just a little time, he was able to make a lot of good eye contacts and meaningful sentence.

The most wonderful moment happened yesterday while I was in the kitchen with my daughter and my son was in the room watching tv. I heard him running towards my direction and he came up to me and gave me a big hug. The most touching moment happened when he said " I wove you!". Oh my God!! I never thought he would actually said that to me without prompting. It was spontaneous and I felt it and I know he meant it. I'm like floating on the clouds!!! Whatever it was that made him said that didn't matter. Hearing those words came out of his mouth was the most wonderful and amazing thing I've ever had during these hard days and nights of searching for answer.

We are on the road to recovery !!

Updates

I haven't been blogging lately because of our busy complicated schedule between work & kids and between kids and therapies and special trainings, school and IEP, summer vacation and summer camps and all that stuff. This weekend I need to organize my thought on what to prioritize first. I want to blurt it out here in my blog since it helps me to remember things when I write them. Two more weeks and school is over. My son will go on a 2-week vacation before the Extended School Year begins. I'm trying to figure out what to do on those two weeks that he will be home. One of his therapists is cool about working around our schedule and going outings with my babysitter and kids. That makes me lucky since I don't plan on enrolling him in Summer Camp until after ESY is done which will be in August. Not to mention I have my little girl who is also going to be home for the whole summer. He will also be going to private Speech Pathologist for 20 hours. (hopefully he gets a spot on 1 agency I am looking at!!) We also plan on involving him in the kitchen. Since he likes cooking/baking we will have some moments in the kitchen stirring bowls and baking some GFCF food. Besides thinking about the camp, we plan to be out under the sun during the summer. First stop, the beach, then a choice of Universal Studios, Disney or other theme parks. I have five different books that I got from different places that I wanna use to do my research on and plan for the summer. And guess what? I haven't started reading them seriously.

Birthday party is also coming for my fairy prince who's turning 7 on September. Basically, I have to months to plan ahead and hopefully by that time we will have a very nice special place to celebrate this special day.

Before I forget, I have one more lab work for him to do and all the test will be done for now. The other one that we sent to Paris, France came already with a not so good result which I have yet to discuss with his doctor when we go to our appointment sometime in July hopefully.

Best Juice I've Tried So Far

This juice brand is becoming more popular and popular. But I don't know about kids. Kids love super sweet juice. But they only need natural sugars that come from eating fruits and vegetables. If you check the sugar content in juices like Caprisun, Mott's & any other juice in the regular grocery store you'll find 24 -30 grams of sugar in it. I personally don't give my children packed juice in their lunch bags. All they have is water. My son happens to be taking probiotics as part of his treatment. As much as I want to avoid giving him juice, I have no other way of bringing this probiotics into his stomach but to mix it with juice. Only then do I use Honest Kids which has only 10 grams of sugar in it to fulfill this part of treatment.

Yeast Free Pizza

I got the recipe from Special Diet for Special Kids 1. I've been thinking about making the pizza crust for a very long time and I'm glad I did today. This pizza crust is made out of chickpea flour and sweet rice flour. After 15 minutes in the oven, I got it out & tried it. It taste very good and can be a substitute for bread as per my opinion. My son ate a piece and I think he loved it. He was too busy watching the dvd on his player that he just kept eating. I don't know yet if he will have a second time on this pizza. But as for me, it was awesome good.

Ingredients:
1 cup Chickpea flour
1/2 cup Sweet Rice
2 TBL Vegetable or Olive Oil
2 tsp Baking powder
1/2 tsp Garlic Powder (I use garlic salt instead & skip the salt)
1/2 cup Water
To taste Salt

Combine all ingredients together. Mix thoroughly and spread into a large pizza pan or greased cookie sheet. Add toppings prior to baking. Preheat oven at 450 degrees. Bake for 15-20 minutes or until crust is brown and toppings are cooked. For my son, I don't usually put toppings for he only likes marinara sauce or tomatoe sauce. Makes it easier for me.

Pansit Using Rice Noodles

My son has been asking me for "moodles", his way of saying noodles and I have just discovered this Thai Kitchen Stir Fry Rice Noodles at Whole Foods Market. Well, the main ingredients are basically the same except for some substitution of the regular soy sauce we use.

Ingredients:
Rice Noodles
Carrots
Cilantro
Green beans
Pork/Chicken (can be mixed together)
Celery
Onion slices
Garlic/Garlic Salt
Tamari Sauce/La Choy (my son is on a mild yeast free diet so I try to avoid this stuff)
Chicken broth or chicken bouillion (some people use GF Chicken bouillion, I don't because I try to avoid yeast and MSG)

If I am in a hurry, I use 365 Organic Thai Stir Fry Mixed Veggies. They are awesome!! I like the way they mixed the onion into it. It makes it easier for me to skip a step.

Saute onion, garlic and pork/chicken. Throw the veggies into the pan and stir. Put the rice noodles. Pour in the broth and garlic salt to taste. Once veggies are cooked, leave a little bit of liquid/broth to allow the rice noodles to expand and suck in some of it.(so as not to make the pansit dry)

Spring Cleaning Now That It's Allergy Season




Six months ago, I stopped buying household cleaning supplies from the store. I came to realize how toxic they are in human bodies even though they work really fast in getting read of germs & stains inside my house. I admit using them every single week to clean my sink, windows, toilet bowls & tub because they are really super heroes to me. But not anymore..

My husband & my kids have allergies that can be worst at times especially during this time of the year. I still remember the time when I took a day off to relax at home away from kids (they were in school). An hour after my husband dropped them off to school, the teacher called me and asked that I pick up my son for he had a severe allergy reaction... to what?? She said he has not eaten anything and they just came out to the playground and he started having this hives like thing all over his body. I figured it must be the tree or pollen..I don't know. Seeing my son with his face swelling made me realize how fragile they could be when exposed to this elements. And that I have to start getting read of all harmful chemicals at home which means changing almost completely everything over to more environmentally friendly cleaning products. Of the estimated 80,000 synthetic chemicals in our environment, only a fraction of them have been tested for safety. That makes me worry about the long-term impact of chronic exposure.

Organic Housekeeping

I'd like to share to some of my new found best friends in the kitchen and everywhere in the house with you. I hope that you will make use of them not only to protect your family but also for our mother Earth. This is part of my contribution to help green the earth, recycle and save.

Sweat stains-soak shirt in vinegar before washing them
Leather furniture-use glycerin-based liquid saddle soap
Hard woven/wicker-scrub furniture with a moderately stiff scrub brush dipped in warm salt water.
Water rings from wood-remove with a mixture of 1 tbsp. white vinegar in 1 cup olive oil.
Furnitures-use 4 parts olive oil and 2 parts beeswax heated in a double boiler
Sink-hot water & mild dishwashing liquid and/or baking soda, rinse with water.
Sink stains- use hydrogen peroxide on a clean wet cloth, rub it on the stained surface and rinse it off immediately.
For sanitizing sink-Use Bon Ami or Oxyclean (an oxygen bleach)

When In Doubt, Dial Them Out


I get to overwhelmed by the fact that I have to check all the labels on the cleaning agents I use at home. So far, the numbers listed below are on my list to call. Got gluten? Of course, I would prefer to have the most hypo allergenic & greenest of them all aside from being gluten free. I started changing our laundry detergent last week and I have yet to attack my kitchen & bathroom cabinets for gluten & hazards.

Salmonella Outbreak

I'm so glad he liked the slightly salted plain rice crispies that I bought yesterday.

I am beginning to think of what he's going to have for tomorrow. I just heard from the news about the pistachio salmonella outbreak. Ooops! I just bought a bag of pistachios yesterday from Trader Joe's!! Well, they said not all pistachios were contaminated. The recalled pistachios were shipped on or after September 1, 2008 by California processor Setton Pistachio of Terra Bella Inc. The FDA has announced that because the pistachios were used as ingredients in many foods, many products may be recalled. You should be aware of products from grocery chain Kroger Co. The company has recalled its Private Selection shelled pistachios in Kroger, Ralphs, Fred Meyer and other stores owned by Kroger.

Snacks for Tuesday



I have gone out early from work today and got a little time to pick up some things at Trader Joes. I don't really know what to buy because the last time I shopped here was for something healthy gfcf & a bit sweet snack. But now I have to drop the second to drop sweets. And today I got some nuts, lightly salted popcorn,tortilla chips and rice crispies. My son didn't like the popcorn I bought him yesterday. I am going crazy thinking about the foods that he can eat..I wish God will send me an angel to guide me through this.

Good Snack but not GFCF


I would recommend this Popumz to be in your kids lunch bag because they are so good. If you look in the package you will see the healthy benefits it has in a bag like omega3, source of protein and fiber. The best thing is they are organic and contains 0 Trans Fats. My daughter loves this but at first she refused to eat. I also take one of this in the office for snack. This is from Whole Foods by the way.

Vegetable Today


The vegetables I picked for this week are broccoli, spinach, cucumber and collard green. Broccoli, because it's my son's favorite. I want to try cucumber for his snack since we are on a mission to get rid of sugar. Spinach is for any dish I will prepare this week. It could either be for tinola or vegetable soup. Collard green because I want to try a new recipe. I love collard green. They are tasty and they are an excellent source of beta carotene, folate and vitamin C. Collards are also a good source of calcium.

Tougher This Days

I'd gone out for just grocery shopping today and prices sure hit my pocket. I couldn't
imagine how 3 bags of groceries could cost over a hundred bucks and yet they're not
filled all the way to the top. Being on GFCF diet is a tough decision to make. And for the last 3 years, I had been contemplating on getting my son on the diet and finally, I decided once and for all to put him just this year. Being on the diet means you have to never eat gluten & casein ever again. And once he accidentally eat just a tiny bit or crumbs of food with gluten, I have to be prepared to suffer the consequences of it. That means 3 days of negative behaviors. It takes about 3 days to get that gluten out of the system even if it is a tiny bit of it. And today, is my first experience of him eating a gluten in the form of a cookie since February. He'd been wanting to eat it as soon as he saw his sister munched on it. Just a split second of me having turn my head back, he got the culprit into his mouth. I should have asked him to spit it out, but because I panicked I wasn't able to think fast of what to do. I was so disappointed and felt all my hardwork were wasted. I kept thinking if I should put all of us on a diet. I don't know the answer yet. Sometimes I think I should not, considering the economic situation and sometimes I think I should. While some families embraced the diet, I am still not prepared to do so.

Snacks This Week


Today I went grocery shopping for this week's snacks. I spent an hour going through the isles & reading labels to check for gluten free, casein free & yeast free items. Some of my top picks are the green peas & white corn, carrots, corn puffs, gluten free corn flakes, gluten free/casein free/nitrite & preservative free beef hamburger patties. I am going to try to get him to eat the brown rice cracker vegetable flavor by Whole Foods. Now these are all for my son. My daughter's picks are yokids yogurt, 365 Quack & Bite crackers (organic Gold Fish), Annie's Bunny Graham, her favorite 365 Frosted Flakes and I also got my favorite drink Almond Breeze milk for Andre's chicken soup. Yes, I pour milk on his chicken pasta soup. As much as I don't want to buy fruits, as they are food for the yeast, I have to pick up some organic Fuji apples, pears & bananas for everyone in the house except for my son. I have instructed my babysitter not to give any fruits to him from now on until he is cleared. It is a very tough decision since eating fruits is one of his favorites.

Yeast Free Food



As we progress on gluten free & casein free diet. We have decided to put our son on yeast free diet as well.
Candida, or Candiasis, the yeast infection, gets its name from Candida albicans, which is harmless yeast that live in the mucous linings of our digest tract and other membranes. Normally harmless, the fungus lives in harmony with other microorganisms in the body, but can grow out of control. When it grows out of control, our body gets sick in a way we are unable to process information correctly because our brain gets affected and our moods & behavior changes. The main cause of yeast infections are:
  • Antibiotics
  • Steroids
  • Hormones
  • Birth control pills
  • Stress
  • Sugar
Yes, sugar! My son is addicted to anything sweet and tends to crave all day for it. Sugar is one of the biggest problems; Candida albicans thrives on sugars and sweeteners. Avoiding all sweeteners, including dextrose, fructose, maltose, glucose, sorbital, and aspartame as well as other food additives. MSG, malt and many products added to canned and packaged foods will aggravate or promote yeast growth.

What to Expect
The feeling that our body will undergo once yeast is being avoide will be just like detoxifying, uncomfortable symptoms can begin a few days into the diet but only last a day or two. They including headache, muscle pains, fatigue and sometimes it might feel as if you have the flu. These are the hardest days of the diet; the yeast inside are SCREAMING to be fed. As they die off, they release gases and that’s what is causing those horrible headaches and other symptoms. By the time these symptoms disappear, you will be feeling fantastic.!

Some recipes I have found on the internet are listed as follows. I might have to make some of them this week.

Easy Crock Pot Chicken

Put 3 pounds bone in or 1-2 pounds boneless chicken in crock pot. Cover with a can of cream of mushroom and cream of chicken soup, sprinkle with salt and pepper. Cook on low 6-7 hours or high 3-4, depending on your crock pot, until done. Serve over steamed rice, with a side of green vegetables.

Steak, Baked Potatoes and Salad

Prepare your favorite Steak on the grill and serve with baked potato (yes, with butter and sour cream!) and a salad with a healthy dressing (low sugar) Preferably an oil and vinegar dressing. While this may seem taboo to most diets, enjoying meat and potatoes, in moderation, is not only ok, it's very satisfying. Steak can be replaced with other meats, such as meatloaf, but don't add sugar.

Oven-Fried Chicken with Corn Bread, Mashed Potatoes and Green Beans

Heat oven to 375°F. In roasting pan, melt 1/4 cup butter in oven. Combine 1/3 C. Rice Flour (or any non-gluten flour), 1 tsp each Salt and Poultry Seasoning and 1/2 tsp pepper in flat bowl or on plate. Dip cut up chicken (boneless, bone-in, pieces-any type) in melted butter, then coat with flour mixture. Place chicken in pan. If bone-in, bake 25-30 minutes; turn chicken over. Continue baking 30-35 minutes until fork tender and cooked completely. If boneless, reduce baking time by half, but check to make sure cooked thoroughly. Serve with the following recipe and a side of mashed potatoes and green beans.

For cornbread:

  • 1/4 cup oil
  • 1 cup milk with 1/2 tsp vinegar added to sour it
  • 2 eggs
  • 1 cup cornmeal, yellow or white
  • 1 tsp baking powder
  • 1/2 tsp baking soda and salt
  • 1 cup frozen or thawed corn

Mix wet ingredients together, than add dry ingredients. Pour in to greased 8 x 8 inch pan, bake at 400 degree oven for about 20 minutes.

Pasta Night

Most supermarkets now carry a variety of rice pasta. Experiment with them to find your favorite, as some cook better than others. Make sure to cook according to direction. Serve with your favorite pasta sauce, look for one that is low in sugar and does not have added corn syrup. Add as much cheese, meat and vegetables that you like. Serve with salad or greens. Remember not to be tempted by sides of bread. But you can fill up on as much of the pasta and greens as you want.

Taco Night

Serve Corn Tortillas (soft or hard), heated according to direction with one large bowl each:

  • Shredded Lettuce
  • Chopped Tomatoes
  • Chopped Onions
  • Refried Beans,
  • Shredded Cheese
  • Salsa

Pork Chop Dinner

Brush boneless pork loin chops, cut 3/4 inch thick with 2 tsp. lemon juice. Season with 1/2 tsp. ea. dried thyme, salt, and basil and 1/4 tsp. ginger. Broil for 8-10 minutes, 3-4 inches from heat, turning once. Cook until no pink remains and juice runs clear. Serve with ride-pasta salad and a side of your favorite vegetables.

Pecan Crusted Salmon

Grind 2 cups pecans in to a coarse meal, add 1 1/2 tsp garlic salt and 1/4 tsp or less cayenne pepper. Coat 4-5 oz. salmon portions with olive oil, roll in pecan mixture and place on baking sheet. Bake at 450F for 5 minutes or until done to your liking. Serve with salad and a side of your favorite vegetables. Bigger appetite? Add a side of oven baked french fries. To make this even quicker and easier, just grill salmon with seasoning and olive oil.

Experts say taking advantage of all the good parts of the diet helps offset those sugar and bread cravings.

For breakfast and lunch snack on:

blueberries, nuts, iced green or herbal tea, sunflower seeds, corn chips, rice cakes and salsa, hummus, vegetables and dip.

World switches off to save planet in "Earth Hour"

Lights went out at tourism landmarks and homes across the globe on Saturday for Earth Hour 2009, a global event designed to highlight the threat from climate change.
From the Sydney Opera House and Harbour Bridge to the Eiffel Tower in Paris and London's Houses of Parliament, lights were dimmed as part of a campaign to encourage people to cut energy use and curb greenhouse gas emissions from fossil fuels.
Organizers said the action showed millions of people wanted governments to work out a strong new U.N. deal to fight global warming by the end of 2009, even though the global economic crisis has raised worries about the costs.
"We have been dreaming of a new climate deal for a long time," Kim Carstensen, head of a global climate initiative at the conservation group WWF, said in a candle-lit bar in the German city of Bonn, which hosts U.N. climate talks between March 29 and April 8.
"Now we're no longer so alone with our dream. We're sharing it with all these people switching off their lights," he said as delegates and activists sipped bluish cocktails.
The U.N. Climate Panel says greenhouse gas emissions are warming the planet and will lead to more floods, droughts, heatwaves, rising sea levels and animal and plant extinctions.
World emissions have risen by about 70 percent since the 1970s. China has recently overtaken the United States as the top emitter, ahead of the European Union, Russia and India.

The U.N. Climate Panel says rich nations will have to cut their emissions to a level between 25 and 40 percent below 1990 levels by 2020 to avoid the worst effects of warming. Developing nations will also have to slow the rise of their emissions by 2020, it says.
Australia first held Earth Hour in 2007 and it went global in 2008, attracting 50 million people, organizers say. WWF, which started the event, is hoping one billion people from nearly 90 countries will take part.
"The primary reason we do it is because we want people to think, even if it is for an hour, what they can do to lower their carbon footprint, and ideally take that beyond the hour," Earth Hour executive director Andy Ridley told reporters at Sydney's Bondi Beach.
In Asia, lights at landmarks in China, Singapore, Thailand and the Philippines were dimmed as people celebrated with candle-lit picnics and concerts.
Buildings in Singapore's business district went dark along with major landmarks such as the Singapore Flyer, a giant observation wheel.
Other global landmarks that switched off their lights included the Petronas Towers in Kuala Lumpur, the Reserve Bank in Mumbai, the dome of St Peter's Basilica in Rome, Egypt's Great Pyramids and the Acropolis in Athens.

What's For Today -Spaghetti for Dinner

Today I'm making spaghetti for dinner. I have yet to figure out what's going to be for lunch tomorrow & not to mention snacks. Today he had apple & carrot cut ups, cassava chips, & pretzels for snacks, then he had the sweet corn kernel, fried chicken marinated in gfcf soy sauce, garlic & lemon and white steamed rice for lunch. I feel so guilty of not having enough vegetables at home these days. I have yet to go grocery shopping again for veggies.

For my spaghetti:

I use Prego Sauce, lean ground beef, garlic, onions, brown sugar, sea salt to taste, some pickle relish and brown rice pasta. I cook it the ordinary way.

Magazine I Love



Yup! I've been looking for this all over the stands and finally I got them. All good stuff & alot of resources. They have good recipes that I am thinking of trying once I get my hand on that Kitchen Aid mixer. I love to read health magazines not that I am a healthy living person but just because I want to know what's good & bad, learn new things, homeopathic & kid's stuff. I stick them in my brain for my own use or for someone who needs an eco friendly advice.

Groceries Today


After dinner my husband & I went to the grocery store to pick some items on my list. Some of the things I bought today includes my kids' snacks for the week.

I wasn't paying attention while the lady was scanning. When we were in the car, I started reviewing the items on the receipts & found 1 item I didn't expect the price to be that much. I was gonna go back, but what the heck..it's freezing cold out in the parking lot, then I had to walk about 15-20 feet & I was wearing thin pants. I had to step back into the car & forget about it. I'll just make sure to put my eye on the scanner & the monitor next time so it won't happen again.

Today we had dinner with the whole family at MIK. Before I left the house, I had to figure out what I should bring for my son. I realized I didn't cook anything but rice, monggo soup & fish for our lunch. I didn't have any choice but to pack the left overs and bring it with me in the restaurant. When we got there, the first thing he opened was the lunch bag. He found some cassava chips..thank God I brought some chips for him to munch on while waiting. Then it was time for me to pick my food. I glanced through their menu and found gluten free section which includes spicy shrimp and roasted corn risotto. I quickly asked the server if they can make it without having to use any butter, cream & red chilli. She then proceed to ask their kitchen and came back in a minute telling me that they can do it and they cater to some people who have allergic reactions to food. I was released!

Seeing my son looked at us while eating spaghetti & meatballs made him asked for it but I was glad he didn't make a big fuzz about it when I said they're not gluten free. He ended up eating all the shrimps and a little rice on the risotto and drank his HONEST KIDS juice I bought from COSTCO. This juice was the only brand I've seen that has less sugar than the rest in the grocery store and they are free of gluten & casein too. NO HIGH FRUCTOSE!!

My emergency links. I always have this in my freezer just in case he wouldn't like the breakfast I prepared for him. Or, sometimes when I have no more energy left to cook for dinner, I pull this out & microwave it, then serve with steamed broccoli. He'll be happy & contented.

These are great tasting according to my son. I bought these from WF & the price, ain't bad..it's well worth it. No Nitrite, no gluten, no casein, all natural, & no preservatives.

It's not easy for me to go merry-go-rounding inside the grocery store to check all labels and figure out if he'll like it. This links are a hit! I'm glad I found them!

First Few Supplements




















These are a few supplements that he first had:

Vitamin C- he takes 500mg. Vitamin C
Omega 3-for the brain. Even my daughter takes this. She is a very picky eater and would not eat salmon or
sardines. So, just to give her fish oil in her body, she takes 2 omega 3 daily. I use Nordic Naturals brand as they known to make good non rancid fish oil supplements.
Omega 3-6-9-same benefit except it also helps on the behavior
Calcium- since he does not drink milk and cannot have any..because of allergic reaction
Vitamin D- we all need atleast 2000 iu's of this. The vitamin D drop is a good supplement since it does not taste anything but water. Just a drop a day in the water is all it takes or even in juice or favorite drink.

Magnesium Sulfate Cream

I think this little thing helps lessen crankiness and moodiness. It offers the same benefit as the Epsom Salt Bath. Both of my kids were used to having epsom salth bath at night before going to bed. It helps release toxins in their body and calms them down. It aids in having a good night sleep and in constipation as well. Normally, I pour the bath tub with water and put two cups of epsom salt. I let them play in the water for 2o minutes. I tried to be careful since if they drink some of the water, it can cause diarrhea. But my kids are grown they understand that they cannot drink water from the tub regardless if there is epsom salt or not.

Because of my busy schedule, it is hard to keep them in the tub for 20 minutes everyday. So this cream helps me alot. I rub it on his back 3-4 times a day.

Junky Sweet vs. Glee

Once upon a time I thought all candies are the same. They all can rot your teeth. And eventhough how hard I tried to avoid candies for my kids still I wound up going to the isles of candies in the store. But one thing I learned is choosing the right candies for them. Those candies we got from birthday parties are the ones we avoid and those by the checkstands of grocery stores. Those are fast candies as I called them. They are like fast foods they tend to look good and make me wanna buy them.. but in the long run they don't offer anything except when I'm on sugar rush. Well, my son likes them!. But most of all, he likes gum.

Since February, I avoided non health stores when buying candies or chocolates. I buy him his GFCF gum at Trader Joe's. The Glee Gum is my favorite. It comes in different flavors and it tastes natural. Most of all, it's sugar free. I have 3 packs of these in my bag. One for me and one for him and the other one is extra in case of emergency.

Oh! And before I forget, I have introduced this toothpaste to him and to my daughter last Friday. Guess what? They did not like it. What is to like to a boring not so good tasting natural anticavity toothpaste? I am still creating a plan to substitute this from the regular toothpaste they use until I get rid of them. It will be putting a little bit of Tom's Anticavity Flouride Toothpaste & Aquafresh together. And gradually increasing it until the other one's gone. That's how I became successful in replacing their regular Aunt Jemmima's Syrup for their french toast with Pure Maple Syrup. They didn't complain a bit. As to Aunt Jemmima's, she went straight to the trash can.
